Perfect as a starter. You can vary the amount of blue cheese depending on how sharp you want the taste to be.
Alternatively, fry some chopped bacon and add to the mix, then pour over pasta for a main course!
Ingredients: - Small button mushrooms, washed (cut larger mushrooms down to a suitable size) - Double cream - Grated cheese (preferably mature cheddar) - Blue cheese, eg. Stilton - Garlic clove, crushed / garlic puree - Salt to taste |

Method: 1. Fry the mushrooms in a little oil with the garlic until soft. 2. Remove from the heat and allow to cool for a couple of minutes. 3. Add the cream and grated cheese and return pan to a gentle heat. Add enough cream to cover the mushrooms. 4. Stir until the cheese has melted, then crumble the blue cheese into the mixture. 5. Stir until all of the cheese has melted and the sauce reaches the desired consistency (note that it will thicken on standing). 6. Serve immediately, with toast or crusty bread rolls. | |
