The Amazing Pingburgers!





Ingredients:

- Minced beef (400g should be sufficient for about 6 medium-sized burgers)
- Crushed garlic
- Crushed chillies
- 1 egg
- 1 beef OXO cube
- Sweet chilli dipping sauce (optional)
- Stilton cheese



Method:

1. Combine the mince in a large bowl with a clove of crushed garlic, the OXO cube and a sprinkling of crushed chillies.
2. Break the egg into the bowl and add a squirt of sweet chilli sauce, if desired.
3. Knead the mince with your fingers to "beat" the egg and mix all of the ingredients well.
4. Continue to do this until the mixture takes on a doughy consistency and holds together.
5. Roll a small handfull of the mixture into a ball. Press your thumb into it to make a hollow.
6. Place a small cube of Stilton (about 1cm) into the hollow and press the mince mixture around it. Roll gently to reseal it then flatten it slightly (Pingburgers will be quite thick!).


Pingburgers are best cooked over a hot barbeque though they can also be grilled or fried.
The key to successful cooking it sealing the outside so that the cheese cannot escape! They should be watched carefully during cooking to watch for escaping cheese. If you notice cheese dribbling out, simply turn the burger over and cook gently for longer on the other side.
Pingburgers should cook in around 8 to 12 minutes (turning occasionally), depending on how thick they are. Be aware that they will become more spherical as they cook. Check their cookedness by cutting into one with a knife and checking that the juices are clear.
